A Few words

~ Biography ~

My passion for cooking started at a very young age in Calgary, Alberta, Canada. Although it started as simple as mac & cheese, I have prepared more than 500 various dishes across many regional cuisines.
My journey has taken me from one of my first jobs at Athens Greek Restaurant to my venture business Corby Hall that catered to special events with 20 years of experience.
I am a big fan of exploring the limitations of the palette and often experiment with new recipes.

In 2006, I moved to China and delved into learning various Asian dishes. My personal favourite being, Spicy Bullfrog and Prawns stir-fry.
Returning to Canada in 2019, I opened Corby Hall with a partner in 2023. My strongest areas of cuisine are Canadian, American, Italian, Asian (Chinese/Thai/Viet) and various seafood dishes.
My culinary goal is to continue my journey and study to become a certified chef. The dream is to someday build a three-star Michelin restaurant with exquisite signature dishes.

Working in professionally in various restaurants. Including a Greek restaurant, a steak-house and an Asian fusion restaurant located in China.
Also owned Corby Hall, a special events venue with customized catering.

27 Yrs

Culinary experimentation and home cooking. I have cooked over 500 various dishes. I have explored GoodFood, Chef's Plate and HelloFresh for years.
I enjoy cooking, baking, mixology and exploring elevating classics.

2025

This marks the year that I have decided to more seriously pursue my culinary arts passion. Including more formal studies and more intense practice.
Enrolling in a certified working chef (CWC) or certified chef de cuisine (CCC) program to expand my credentials.

2006

Moved to China for about 15 years, learned various Asian dishes, spices and sauces during travel to various neighbouring countries.
I got to experience some dishes that are very difficult to find in North America such as sea-horse kabob.

2019

This year marks my return to Canada. I focused on estate investment and technology as it is was very financially lucrative. Enjoying much success, it was time for a solid transition.
While continuing to cook from this period, 2025 was my decisive point.

Living in Asia for over 15 years, I have experienced a wide variety of Oriental dishes not commonly served in Canada. I create Korean, Chinese, and Japanese dishes with excellence. Asian fusion or totally authentic, the choice is yours.

I really love French cuisine for its sophistication and delicate flavor combinations. French cuisine is perfect for a romantic evening or a private event for several people. I am ready to offer you a carefully crafted menu and traditional French desserts.

Canadian + American Cuisine

Canada is famous around the globe for our beef, bacon, mac & cheese and French poutines. America is known for things like hamburgers, hot dogs and Tex Mex. Elevating these dishes is not only tasty and fun but can also add a sense of nostalgia.
